Ingredients of Pui Shaak'er Chorchori
- It's 1/2 kg of Pui Shaak(Malabar spinach).
- You need 8 cubes of kumro(pumpkin).
- It's 1/2 of medium sized begun (eggplant)cut into cubes.
- You need 1 of medium sized alu(potato)cut into cubes.
- You need 1/2 tsp of turmeric powder.
- It's 1 tsp of coriander powder.
- You need 1 tsp of cumin powder.
- You need 2 tsp of ginger paste.
- You need 1 tsp of green chilli paste.
- Prepare 1 tsp of panch phoron(Bengali five spices) for tempering.
- Prepare 3 tbsp of mustard oil.
- Prepare 1 tsp of sugar.
- It's 1/2 cup of water.
- Prepare to taste of Salt.
Pui Shaak'er Chorchori instructions
- Cut and clean the shaak first, cut the leaves and then chop them, also cut the danta(tender stalk) approx 1 inch long pieces and slit them in between..
- Cut all the vegetables as said above. Wash and keep them aside..
- Now heat a Kadai, add mustard oil, temper it with panch phoron..
- Then add begun,alu, kumro and danta of pui shaak,fry them..
- Add turmeric powder, salt and sugar,stir well. Cover and cook for 5 minutes..
- Add cumin powder, coriander powder, ginger powder and green chilli paste. Mix well cook for 2 minutes more..
- Now add 1/2 cup of water into this. Mix, cover and cook on low flame..
- When the veggies are half cooked add pui shaak.Mix thoroughly, cover and cook until all the veggies are done..
- Your Pui Shaak'er Chorchori is ready to eat..
