2. Prepare 1 of Grated Red Leicester cheese (optional, I like to use 2 cheeses).
3. It's 2 slice of of bread.
4. Prepare 1 of half teaspoon of wholegrain mustard.
5. It's 1 of egg, beaten.
6. It's 1 of black pepper.
7. Prepare 1 of splash of beer (brown ale) or worcestershire sauce.

Welsh Rarebit instructions

1. Toast the bread and allow to cool..
2. In a bowl, mix the beaten egg with the grated cheese. Add the mustard, beer or worcestershire sauce and mix well..
3. Spread liberally over the toast and grind some black pepper over the top..
4. Toast untill cheese is bubbling. Serve.
