- You need 3 cup of self raising flour(might need more).
- It's 1 tbsp of lemon zest.

- It's 1/2 of hot water.
- You need 3/4 cup of sour milk, room temperature.
- Prepare 1 tbsp of butter/ blueband, room temperature.
I'm obsessed with Mandazi; hopeless in love with them. I get so excited whenever it is on the menu and it's not very often, for obvious reasons. Mandazi is also known as Swahili Bun, Dahir Adani, Swahili coconut doughnut, mahamri/mamri (when made with coconut milk). Mandazi is a form of fried bread that originated on the Swahili coast, and one of the principal dishes in the cuisine of the Swahili people who inhabit the African Great Lakes.

- In a large bowl, add the hot water and mix in the sugar (till dissolved) and the nutmeg..
- Mix the flour and the lemon zest, then add these to the wet ingredients, followed by the sour milk and knead the dough..
- Create a bore(Kashimo😀😀) in the dough and add the butter. Knead the dough until it no longer sticks to your hands or the bowl. Around 10minus or so.
- Allow it to rest for about 30 minutes so that it elasticates and the gluten completely activates..
- Roll out the dough about 1/4 inch thick and with a knife (or cookie cutter or a round cup), shape your maandazi..
- Heat your oil and fry the maandazi until they are golden brown on each side. This will take about a minute or two. Make sure your oil is not too cold because if it is, they will absord too much of the oil and become very disgustingly soggy..
- Enjoy with a hot cup of tea or coffee.
It is a dish that can be served as a breakfast with tea, appetizer before lunch, or even a sof… I love Mandazi (that is the Kiswahili word for the donuts and what they are called in the East African countries that they originate from).
