Egusi(Melon)Soup with Cow leg instructions
- Wash your meat into a pot add water and your seasoning then allow to cook for up to 20 mins.
- Wash your fish and add to the meat stock.
- Cut your ugu leaf from the stem into a bowl and wash thoroughly with salt and chop it.
- Add your maggi seasoning, palm oil and pepper to the boiling meat and fish stock.
- Add your already washed bitter leaf.
- Then pour your already grinded egusi(melon) into a bowl and add little water and mash.
- Cut it into balls into the boiling stock and allow to cook for say 15 mins.
- Then add your chopped ugu leaf and crayfish and allow to Steam for say 2 mins.
- Check for salt and if necessary add to taste..
